As a result the yield is extremely low but this is compensated for by an oil of excellent quality with an acidity of less than 0.2% and a substantially reduced number of peroxides.The olives are processed at low temperatures in keeping with themodern philosophy of oil-making.This permits extraction of an oil thatis extremely fresh and endowed with outstanding qualities in terms ofaroma and flavour.
